Time to warm up with some delicious Lebanese style red lentil soup It’s one of my favorites and packed with nutrients. P.s. make sure to serve with lots of fresh lemon squeeze
Ingredients:
1 tbsp olive oil
1 cup red lentils
2 carrots chopped
1 small onion
2 garlic cloves minced
1/4 tsp cumin
1 tsp each dried oregano, paprika
Salt and pepper to taste
A few thyme sprigs
2 cups vegetable stock + 2 cups of water
For serving: lemon juice, olive oil, parsley, croutons
